This research aims to study the microbiological, physicochemical and antioxidant activity of five PANCs (Unconventional Food Plants) marketed in a fair in Belém (PA), with a focus on crop redemption, use and adding value to them inside and outside the regions that exploit them. The methodological procedures were: bibliographic and experimental research, analyzes (antioxidant activity, physicochemical and microbiological). The antioxidant profile of the PANCs of this study was expressive and satisfactory, since these PANCs are great alternatives for their consumption and cultivation in the states that characterize them, but more research and dissemination on unconventional food plants is needed. so that the general population can enjoy the benefits they have.
