The present work evaluate the microbiological and microscopic quality of Salmonella spp. isolation, coliform counting at 45 ºC, detection of mold and yeast and foreign matter research in sugar cane juice marketed in Belém-PA fairs and supermarkets. Regarding the methodology, the research was essentially based on the exploratory study or bibliographic research and a laboratory research, were evaluated the total of 30 samples of fresh sugarcane juice in the Central Laboratory of the State of Pará, in the period of November. 2018 to February 2019. The results showed that 1 (3.33%) sample presented Salmonella spp., 14 (33.33%) presented values greater than or equal to 1100 MPN / mL, according to the MPN table, the molds and yeasts varied from 4 , 2x102 to 2.0x105 CFU / mL and 7 (23.33%) samples presented dirt and foreign matter.
