The present work aimed to carry out the production of layout, the average cost quotation for the values of the opening of artisanal hamburger slate proposing the budget of equipment, furniture and utensils, in addition to proposing standardized operational procedures (POP's), following Resolution - RDC No. 216, of September 15, 2004. The methodology used to elaborate the projected layout used the AutoCAD version 2018, following the proposed standards. For the cost analysis, fixed cost, variable cost and the investment quoted for the opening of the artisanal burger was made. The layout resulted in a shorter processing time through a standardized process, increased production capacity, sales expansion, increased profitability, and quality certification assurance. As a result of the cost quote, an investment of R$49,811.57, fixed cost of R$23,322.90 and variable cost of R$5,770.00. In the mandatory Standardized Operating Procedures (POP's) the beginning of quality control methods and hygienic-sanitary operations for the handlers generating standardization and lower risk of contamination in the production process were formed.
