Thus, the objective of this study was to study the effects of the variables time and concentration of NaCl on osmotic dehydration as to the loss of carotenoids and the loss of mass in slices of carrots, as well as optimizing the process using the methodology of Response surface. For this, roots cut in slices of approximately 2 mm thickness were used. The osmotic pre-treatment followed the complete factorial design 22, using concentrations of 1 and 5% NaCl in times of 30 and 60 minutes, with central point (3%/45min), in triplicate. At the end of osmotic dehydration, the slices underwent convective drying in a greenhouse, with air circulation at 70 °c/2h, predetermined by the drying curve, followed by storage in airtight polyethylene bags and stored in a desiccator for determination of pH, total soluble solids, total carotenoids, loss of carotenoids, loss of mass and chlorides. The physicochemical composition of the in natura samples showed mean values of 5.3 for pH; 7.7 ° B for SST; 0.96% for acidity in citric acid; 89.78% Humidity; 0.48% of lipids; 0.79% of crude fiber; 1.07% Ash; 1.5% protein; 6.36% carbohydrates; for total carotenoids, 1016.51 μg/g and chlorides, 0.029%. The results obtained from the variables of pH, SST, total carotenoids, loss of carotenoids, loss of mass and chlorides, within the NaCl concentration range and the osmotic dehydration time studied ranged from 6.02 to 6.61; 31.64 to 64.13 ° B, for the carotenoid content and for the loss of carotenoids ranged from 623.55 to 966.29 μg/g and from 132.81 to 475.99, for the loss of mass and chlorides, the values ranged from 6.96 to 10.27% and from 0.67 to 3.37%.
