Although these flours are mostly produced by hand, adequate hygienic and sanitary conditions must be guaranteed from the beginning to the end of the production chain and must continue throughout their commercialization. Aiming to provide broader yet objective access to the information and restrictions required by legislation, this research aimed to create a booklet with guidance on good practices imposed to help improve hygienic and sanitary conditions in the flour movement process. d 'water and tapioca. A checklist based on RDC No. 275 (BRASIL, 2002) was used, in which the sanitary hygienic conditions of 20 commercial establishments located in the Metropolitan Region of Belém were evaluated according to the compliance of the locations, therefore, “YES” to conform, “NO” to not conform and “NA” to not apply.” class percentages were taken and compared with the group classification, where, Group 1 (76 to 100% of “yes”), Group 2 (51 to 75% of “yes”), Group 3 ( 0 to 50% “yes”). Related to the criteria evaluated and the specifications of the legislation, the establishments were classified as average, and presented some divergences, however, with broader access to information aimed at good practices, these could be repaired.
