The Brazil nut burger emerges as a healthy, practical and futuristic option, with this research we aim the study of consumer behavior for an innovative product, with a future market perspective, conducting questionnaires with the general public and using as analytical data base results of scientific initiation already performed in the last years. According to the data obtained, 44.05% of those interviewed would be willing to reduce the consumption of animal protein, being health/nutrition one of the main causes for this substitution followed by animal welfare, 57.56% of those interviewed would be willing to consume the Brazil nut hamburger followed by 47.91% of that would also be willing to buy the product, and 77.17% consider that the product has the potential to be a food of the future.
