Due to its neutral sensory characteristics is extremely used in the preparation of consumed formulations in meals, winning the sympathy of consumers in the northern region of Brazil, however, it has factors that favor microbial contamination, which compromise its commercial quality. Based on the above, this study aimed to evaluate the quality of twenty samples of cassava starch (tapioca gum, as it is popularly known) sold in a market in the city of Belém do Pará. The physicochemical analyzes were performed according to the methodologies described by AOAC (2011), IAL (2005), MAPA (2005). For microbiological analyzes, the methodology described by Silva et al (2001) was used. All samples analyzed presented humidity above the allowed by the legislation (<14%), which obtained values between 53.83% and 57.49%. For the residue analysis by incineration - ashes, all samples were with values of according to the standards required in Brazil (≤ 0.20 g / 100 g). For the pH analysis, 60% of cassava starch samples presented results that differ from researched literature. In the acid factor analysis, all samples were within the standard required by the legislation, being classified as type 1 starch. The microbiological analyzes showed that the presence of Salmonella ssp was observed in 55% of the samples. Regarding total and thermotolerant coliforms, 30% of the samples are at odds to the RDC 12, of 02, january, 2001.
